GRILL: HEAT GRILL TO MEDIUM HEAT, USING BURNERS ON ONLY ONE SIDE OF THE GRILL. REMOVE PRODUCT FROM PLASTIC AND SEASON AS DESIRED. PLACE PORK ON GRILL, AWAY FROM FLAMES FOR INDIRECT COOKING. CLOSE GRILL TOP AND ALLOW TO COOK UNTIL INTERNAL TEMPERATURE REACHES 145 F, ABOUT 1 HOUR. REMOVE FROM GRILL AND ALLOW TO REST FOR 10 MINUTES BEFORE SLICING. CONVENTIONAL OVEN: HEAT OVEN TO 400 F. REMOVE PRODUCT FROM PLASTIC AND SEASON AS DESIRED. PLACE IN A SHALLOW ROASTING PAN AND COOK FOR 4.5 HOURS, UNTIL THE INTERNAL TEMPERATURE REACHES 145 F. FOR BEST RESULTS, COOK TO 170 F. REMOVE FROM OVEN AND ALLOW TO REST FOR 20 MINUTES BEFORE SHREDDING WITH A FORK OR SLICING.
