Grilled Caprese Chicken Pita

The traditional Caprese salad consists of sliced mozzarella, tomatoes and basil. Our pita substitutes pesto sauce for plain basil and adds Grilled & Ready® chicken for a little more flavor.

    12 ounce Grilled & Ready® Chicken Breast Strips

    2 teaspoon balsamic vinegar

    1 cup tomato, small chopped, red, yellow, cherry, or any variety

    8 slice fresh mozzarella cheese, chopped small

    1/4 cup pesto sauce

    2 pita breads

Directions

    1. Place the balsamic vinegar in a small sauce pan, bring to a boil and reduce to a simmer. Reduce the vinegar by 1/2 until it becomes thick, sweet and syrupy. Set aside.

    2. Prepare Grilled & Ready® Chicken Breast Strips according to package directions. Place in a mixing bowl and add chopped tomatoes, fresh mozzarella and pesto. Toss to combine evenly.

    3. Warm pitas, cut each in half, and open pita pocket. Place an even amount of the caprese chicken mixture inside each pita pocket. Drizzle the top of each with a 1/2 tsp. of reduced balsamic syrup to finish the sandwiches.
